Feel Good Potato Skins

Ingredients:

  • 4 medium sweet potatoes
  • 1 tablespoon extra virgin olive oil (EVOO)
  • Salt and pepper
  • 1/4 cup low fat buttermilk or yogurt

  • 4-5 slices bacon, chopped
  • 1/2 cup extra-sharp cheddar cheese

Cranberry Muesli

There may be as many versions of muesli as there are breakfast cereals, but this one’s modeled after the original Swiss wake-you-up—a combination of overnight-soaked grains, nuts, dried fruit and yogurt. Make it the night before and you’ll have breakfast ready when you are.

Ingredients

  • 1/2 cup low-fat plain yogurt
  • 1/2 cup unsweetened or fruit-juice-sweetened cranberry juice
  • 6 tablespoons old-fashioned rolled oats, (not quick-cooking or steel-cut)
  • 2 tablespoons dried cranberries
  • 1 tablespoon unsalted sunflower seeds
  • 1 tablespoon wheat germ
  • 2 teaspoons honey
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt

Spicy Cioppino

San Francisco’s Italian immigrants developed this stew to use the abundant local seafood. We’ve opted for farm-raised tilapia and scallops, but feel free to experiment with whatever is fresh.

Ingredients

  • 4 small red potatoes, (1- to 2-inch diameter), quartered
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 tilapia fillet, diced (about 5 ounces)
  • 4 ounces dry bay scallops, (see Note), patted dry
  • 1 small sweet onion, sliced
  • 2 teaspoons Italian seasoning blend or poultry seasoning
  • 1-2 teaspoons hot paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 cup dry white wine
  • 1/2 cup water
  • 3 plum tomatoes, diced
  • 2 tablespoons capers, rinsed (optional)
  • 2 tablespoon minced fresh parsley, (optional)

Breakfast Parfait

Ingredients

  • 3/4 cup low-fat cottage cheese, or low-fat plain yogurt
  • 1 cup pineapple chunks, papaya chunks or cling peaches
  • 2 teaspoons toasted wheat germ

Preparation

  1. Place cottage cheese (or yogurt) in a small bowl. Top with fruit and sprinkle with wheat germ.

Cool As A Cucumber Cocktail

It’s hot right now here in the Jacksonville Area, so I created this cool and refreshing Spring cocktail to beat the heat.

Cucumber, cilantro and lime combine to give this drink a mild flavor that makes it great for barbecues, pool parties … or just chilling out.

I have been seeing more bars offer cucumber cocktails, and I say it’s about time!

This would go well with spicy foods.

I may make a kicked-up version of this cocktail using chiles!
